A great and quick way to use up your veg and also get some lunchtime protein is to have a fritter, mmm! You can also make it vegan by using a chia seed alternative to eggs, see below. There are only three staple ingredients and it takes minutes to make.
Ingredients:
- 2 medium courgettes or one large
- 2 eggs or 3 tblsps chia seeds with 9 tblsps water
- Half mug wheat / gluten free flour or buckwheat / brown rice flour
- Seasoning
- You’ll need a jelly cloth or kitchen cloth to squeeze excess water from the courgette
Method
- Grate your courgettes
- Add them to the jelly bag or cloth and strain as much liquid out as you can
- Empty the contents into a mixing bowl
- Add your flour
- Whisk eggs and add
- If using chia seeds instead off eggs add the seeds and the water into a small bowl and let them coagulate, it takes about 5/10mins, then when thick add to the mixture
- Add salt, pepper and paprika or cumin, garlic salt for flavouring
- You can also add some cheese if you fancy
- Put a generous helping of olive oil into a large frying pan
- When hot, dollop the fritters into cook, form small mound quickly, they shouldn’t stick with enough oil
- Cook for ten mins or until nice and brown on either side
Once you’ve become a fritter fan like me, you can make them out of practically most veg, potato, sweet potato, butternut squash and the list goes on!
